Kinema is fermented soybean product, but it is associated with the cuisine of the Himalayan region, particularly in Nepal and northeast India. It is made by fermenting soybeans with the help of specific bacteria and fungi. Kinema is often used in traditional recipes and has a distinct taste and texture, which are known by different vernacular names such as Kinema, Hawaijar, Axone.

Sun Dried Fermented Soyabean
Wash the gundruk strands and soak them in water for an hour. Squeeze out the excess water and chop fine. Add onion, tomatoes and other seasonings and then add the gundruk, mix well and cook till gundruk is soft. One can add chillies and prepare Gundruk Achar(pickle) or can add water and boil it till gundruk becomes soft and chewy. Then serve it as a hot Gundruk Soup.

Can i eat gundruk in pregnancy?
Gundruk is beneficial for a pregnant woman as it is rich in iron content, thereby preventing anemia in pregnant women. Furthermore, it stimulates bowel movements, thus preventing the common situation of constipation in the third trimester of pregnancy.
What ingredients are used in gundruk?

Mustard gundruk, prepared with the fermented mustard leaves, is good for health because it is high in beta carotene antioxidants which minimize the chances of diabetes. Futhermore, it is rich in B vitamins and vitamin K.
What is gundruk made of?
Gundruk is made of leafy vegetables. There are 4 types of gundruk: mustard gundruk, turnip gundruk, radish gundruk, and cauliflower gundruk. At NE Origins, you can get premium mustard gundruk, which is made from dehydrated fermented mustard leaves (sarson ka saag leaves).

How to use?
1. In a frying pan add mustard oil two to four tablespoons.
2. Now fry the Dalle chillies and cumin seeds so that they turn brownish.
3. Now add the diced onions and garlic and sauté them so that they sweat.
4. Add a little Lakadong turmeric to the mix and let it cook on a low flame for a minute or so.
Now add the kinema and tomatoes to the pan. Add the salt and red chilli powder as well and mix well.
5. Let that cook for about 4-5 minutes on a low flame and make sure you stir the mix from time to time in order to avoid the kinema sticking to the pan.
6. Now put the flame on a medium heat and let the mix cook for a few more minutes before you add the warm water little by little to the mix so that the water turns thicker and curry like.
7. Garnish with chopped coriander leaves and Voila! Your Kinema is ready to be served with some gundruk ko jhol and plain steaming rice.
